by Katie Ingram, Bar Manager Freddy’s, Amsterdam
Serving Glass: Nick & Nora.
Garnishes: grated cinnamon.
Recipe:
1.00 oz / 30 ml Cognac VSOP or any rich brandy
1.00 oz / 30 ml crème de cacao
1.00 oz / 30 ml heavy cream or coconut cream
0.25 oz / 10 ml Simple Syrup (1:1)
2 dashes of Bittered Sling Clingstone Peach bitters
How to prepare:
Combine all ingredients into a shaker tin and fill with ice. Hard shake your cocktail for 5 seconds. Double strain your cocktail into a chilled Nick & Nora glass. Grate cinnamon over top of the glass.
Flavour Profile: rich / creamy / luxurious mouthfeel
Inspiration: A bitter twist on the classic, Brandy Alexander. This cocktail has stood the test of time, and we think adding a bit of bitterness to it, will really help it sing! For a modern twist on the cocktail, use coconut cream. Sugar will help to balance all the flavours of your cocktail. I would recommend a cheeky dash, or up to 10ml per serve depending on how you like your cocktails.
Batching / group party tips: This is a simple cocktail to batch ahead of time and we recommend doing so! Keep it refrigerated and shake 90ml per serve.
The bitters work well because…. of the spice! All that cardamom and black pepper add nice heat and a tiki-vibe to any cocktail.
