In 2009, Lauren Mote created a housemade modifiers program at the restaurant in Vancouver where she was working. The following year, the bitters, tinctures, vermouths, aromatized wines and infusions grew to take over the entire bar and was highly recognized and publicized by local and international media.

In 2010, Mote partnered in life and business with Chef Jonathan Chovancek, and Kale & Nori, the parent company to Bittered Sling®, was born. Over the next two years, Mote & Chovancek would tirelessly develop recipes and applications specifically for the bitters range to become the bridge between culinary and the cocktail. Bittered Sling® Bitters is a pipedream come to a tasty fruition, celebrating what beautiful ingredients can provide the palate, plate and potion, and represented as the first Canadian bitters line.
