Fireside Old Fashioned

For me, what always reminds me of the holidays is snuggling up next to a cozy fire, under lots of blankets, with a great record playing, book to read, and excellent company.

Serving Glass: old fashioned glass.
Garnishes: burnt orange twist

Recipe:
2.00 oz / 60 ml Canadian rye whisky or American rye whiskey
0.30 oz / 10 ml Spiced Demerara Syrup (2:1)*
1 dash Bittered Sling Clingstone Peach bitters
1 dash Bittered Sling Orange & Juniper bitters

How to prepare:
Combine all ingredients over ice into a mixing glass. Stir until well chilled for 20 seconds. Using a julep strainer, strain your cocktail over a large clear ice cube in a chilled old fashioned glass. Using a lighter, lightly toast your orange twist and express the oil while the flame is still lit, over the glass. Trim the edges to make a neat twist, and place in the glass.

*Rich Demerara Syrup (2:1)
Weigh out 500g of demerara sugar and combine with 250g of hot water, ½ cup of toasted coconut flakes, 3-star anise pods, freshly cracked black pepper, and a pinch of smoked sea salt. Stir until all the sugar has dissolved. Let sit on the counter for 3 hours while the spices infuse. Strain your syrup and store in the fridge for two weeks.

Old fashioned variations are always so fun to make. The beauty of this cocktail lies in its simplicity. Spirit, sugar, water/ice, and bitters – a “bittered sling” wouldn’t you say? When making at home, try any of your favourite dark spirits as the base. Cognac, aged tequila, rum, or bourbon. Show us what you’ve come up with.

Batching / group party tips: This cocktail is perfect for batching. Add 20% dilution if you will be serving on large ice cubes (2” and up), and 10% if you will be serving them on smaller ice cubes.

The bitters work well because…. this will be our spice box for the cocktail. Clingstone Peach adds amazing cardamom and pepper notes, while Orange & Juniper will add in some amazing rosemary and turmeric.
