27 Oct Cocktail: Mezcalerie
2.00 oz (60 mL) Scorpion Mezcal
0.75 oz (22 mL) rosemary syrup*
0.75 oz (22 mL) lime juice
2 dashes Bittered Sling Moondog Bitters
Shake ingredients vigorously with ice for 7-10 seconds. Strain into an old fashioned glass, filled with fresh ice, garnish with a small slapped rosemary sprig.
*Rosemary Syrup Ingredients:
400 g white sugar
400 mL water
5 sprigs rosemary, washed
Bring the sugar and water to a low simmer. Add the rosemary sprigs, and remove from the heat. Allow to steep and infuse for 12 hours at room temperature. Strain the sprigs out, and bottle in clean/sanitized containers for up to 7-10 days refrigerated.
